How to make pasta dough
Whisk the eggs, water and oil together.
Add 3/4 of the egg mixture to the flour and mix until the dough starts to come together. Add the remaining 1/4 of the mixture as needed.
Knead the dough for 10 minutes until it’s soft, smooth and elastic.
Wrap the dough in clingfilm and leave to rest for about 30 minutes before use.
Alternatively, divide the dough into 4 equal pieces and wrap in clingfilm. You can then store the dough in the freezer for up to 3 months. Let the dough defrost before use.
